{"product_id":"antique-french-copper-braisiere-18thc-daubiere-41cm-dovetail-roasting-pan","title":"Antique French copper braisière 18thC daubière 41cm dovetail roasting pan","description":"A gorgeous antique French copper braisière made entirely by hand probably in the late 18th to early 19th century.  Superb craftsmanship, with the tightly fitting lid designed to keep the flavours in, like a latter day Dutch oven, and the coppered brass handles held fast with hand-made copper rivets.  The copper would have been hand beaten to the required thickness, and the dovetailed seams on the side are where the coppersmith flattened the joins of copper together using just his hammer and some molten brass.  Braisières were designed for long, slow cooking of meat, and were placed deep within the embers of an open fire.  The raised rim on the tight-fitting lid allowed the cook to put more hot cinders on top, ensuring the dish was evenly cooked and meltingly moist.   Expensive in its day, the pan would have been a prized item within a household's batterie de cuisine.  The pan measures approx 41cm wide from handle to handle, 33cm otherwise.  The height is 20cm and the depth is approx 21cm.  The tin lining will need replacing if the pan is to be used.  The weight is 3.09kg.
